Old Faithful

Last night I hosted a jewelry show at my apartment for my good friend who designs handcrafted bracelets, necklaces and earrings. My talented friend’s pieces are one-of-a-kind, beautiful and eye-catching.

The party was an excuse to whip up one of my favorite, go-to appetizers for when I’m short on time. Sure, Artichoke Dip isn’t unique like the jewelry, but it is always delicious and always a crowd-pleaser. I’ve relied on this recipe countless times throughout the years and will continue to lean on the addicting snack when I need something simple and infallible. I promise, this Artichoke Dip will not let you down.

Crowd Pleaser

Simple Artichoke Dip

What You Need

  • 1 can artichoke hearts
  • ½ cup light mayonnaise
  • ½ cup grated parmesan cheese
  • 1 garlic clove, minced or 1 teaspoon garlic powder
  • 1 box Triscuits or other cracker of choice

What To Do

  1. Preheat oven to 350°.
  2. Drain artichoke hearts well so that all water has been removed.
  3. Chop artichoke hearts in small and medium pieces or lightly blend in food processor.
  4. In a bowl, mix artichoke hearts, mayo, parmesan cheese, and garlic.
  5. Spread into oven-safe bowl or dish.
  6. Bake for 45 minutes until dip is piping hot.
  7. Serve immediately with Triscuits or other crackers.
