Zucchini Chocolate Chip Cookies

If zucchini can find its way into quick breads, then it can definitely make its way into cookies. These Zucchini Chocolate Chip Cookies have been a favorite of mine for quite some time…they even won a Bake Off at work a few years ago!

No, they’re not the most decadent cookie out there, but the softness and wholesome consistency make them quite easy to eat. The generous amount of chocolate chips in each cookie satisfies a sweet tooth, while the green specs of zucchini and whole wheat flour eases any guilt. Although the traces of zucchini might not count for one serving of vegetables, somehow, its presence gives me permission to eat 3 in a row. I think you’ll find them equally addictive.

Zucchini Chocolate Chip Cookies

Yield: 2 dozen cookies

What You Need

  • 1 egg, beaten
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup honey
  • 1 tablespoon vanilla extract
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup finely shredded zucchini
  • 12 ounces chocolate chip

What To Do

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar. Add egg, honey, and vanilla.
  3. Combine flours, baking soda, salt, cinnamon, and nutmeg in a separate bowl. Blend flour mixture into liquid mixture. Mix in shredded zucchini and chocolate chips until well combined.
  4. Drop cookies by spoonful onto greased baking sheet, and flatten with the back of a spoon.
  5. Bake for 10-13 minutes.
