A Crisp Fall Day

It’s not often I come across a new sandwich that really knocks my socks off. But when I had a Grilled Turkey, Brie, Arugula, and Apple Butter Sandwich at cafe by my office, I ran out the next day to buy the ingredients to recreate it at home. At first I was shocked that I loved the combination as much as I did, since I generally dislike sweet and savory together; however, when something so simple tastes this good, I couldn’t question it. It’s the pairing of rich melty brie and sweet apple butter that really sets this sandwich apart. You can use homemade apple butter, or store-bought like I did, but either way its the perfect lunch for a crisp fall day.



Grilled Turkey, Brie, Arugula, and Apple Butter Sandwich

Yield: 1 sandwich

What You Need

  • 2 slices artisan rye bread, about 1/2-inch thick
  • 1 tablespoons unsalted butter, softened
  • 1-2 tablespoons store-bought apple butter
  • 3 slices fresh roasted deli turkey
  • 2 slices of brie cheese, thickly sliced
  • A small handful of arugula, stems trimmed

What To Do

  1. Spread 1 slices of bread with 1/4 tablespoon of butter. Now spread with 1-2 tablespoon of the apple butter. Top bread with turkey, and cover that with 2 to 3 slices of brie (enough to cover the turkey), and finally, arrange arugula leaves on top. Spread the other piece of bread with 1/4 tablespoon of butter and lay buttered sides down, over the cheese; press gently.
  2. Heat a large cast-iron or other heavy skillet over medium-low heat. Add the remaining 1/2 tablespoon butter and let it melt to evenly coat the bottom of the pan. Cook 2 to 3 minutes until the bread is golden brown and the cheese begins to melt. Flip and cook 2 to 3 more minutes to brown the bread. Cut the sandwiches in half and serve hot.
