Thanksgiving Prep

Halloween has come and gone, and so did the presidential election; now it’s time to focus on the event that really excites me during the fall season: Thanksgiving. Even though my turkey day plans are different every year, my excitement for the holiday never wanes. Between spending quality time with family members, the smorgasbord of food, and the extended weekend, I always anticipate the holiday. This year I’m going to be in my hometown of Des Moines for Thanksgiving, and I can’t wait since its been too long since I’ve been there!

With the holiday only two weeks away, I’m already thinking about what I’m going to contribute to the feast. Since pecan pie is very much a Thanksgiving staple, I love the idea of these Pecan Pie Bars, which are easy to make and even easier to take down. With so many other dishes to prepare for the turkey day, you’ll be thankful for this incredible, make-ahead dessert.

Pecan Pie Bars

What You Need

    Bottom layer
  • 1 stick of butter, softened (1/2 cup)
  • 1 cup brown sugar
  • 2 cups flour
  • 1 cup of pecan pieces
  • Topping
  • 2/3 cup butter
  • 1/2 cup brown sugar
  • 1 cup milk chocolate chips

What To Do

  1. Preheat oven to 350 degrees.
  2. Mix butter, brown sugar, and flour together until fine crumbs form. Pat into the bottom of a 9x13 inch pan to form the bottom layer.
  3. Sprinkle pecans on top of bottom layer.
  4. Melt 2/3 cup butter and 1/2 cup brown sugar in a small sauce pan. Bring to a boil, and boil for 1 minute. Pour mixture over pecans.
  5. Bake 18-20 minutes.
  6. Remove from the oven and sprinkle with 1 cup milk chocolate chips. Place in the fridge right away to cool. Once cooled, cut into squares.
