I’ve never been a television junkie.
At times there will been one or two shows that I get into, but even then, I’ll forget to watch and fall behind to the point where I just throw in the towel.
In my mind, I like the idea of watching Top Chef and other reality cooking shows, if for nothing else, to pick up ideas and tips; but I never seems to find the time.
Since magazines are much more my thing, I was excited to stumble upon an article in InStyle featuring Top Chef host Padma Lakshmi, and recipes from her native India. I felt like I was getting the best of both worlds, without turning on the TV.
Padma’s recipe for Mango & Yogurt Parfaits really caught my eye. Although she suggests these for dessert, I thought they made the perfect breakfast that was a departure from the norm. I switched out the vanilla yogurt for Greek yogurt, making it slightly less sweet and even more breakfast-appropriate.

What You Need
- 3 medium mangos, peeled and cubed
- 2 tablespoons lime juice
- 2 tablespoons honey, or to taste
- 1/4 teaspoon ground cinnamon, or to taste
- 3 cups vanilla or Greek yogurt
- Fresh mint leaves, diced kiwi, or mango for garnish
What To Do
- In a food processor or blender, puree mangos until smooth and transfer to a bowl. Add lime juice, honey and cinnamon to the mango puree and stir to combine. Chill until ready to assemble parfaits.
- To assemble: In parfait or stemmed glasses, spoon in 1 inch thick layer of yogurt, top with a layer of puree and repeat layering to the top. Chill until ready to serve. Garnish with fresh mint leave, diced kiwi or mango if desired.
