Detox Monday

Just because I’m not working right now, doesn’t mean I’m not insanely busy. I can’t believe how many loose ends I still need to tie up before the big move. Plus, going through my condo has turned into quite the project. I’m not a hoarder by any means, but I have managed to collect an unexplainable amount of crap. It has felt so good to purge unnecessary items that have been collecting dust in the back of my closest.
Since I have plenty to do, my temporary retirement has yet to be filled with glorified lunches out and pool days. For this reason, I’ve been making quick lunches at home so I can keep powering through. Today’s lunch was a recreation of the Southwest Turkey Wraps my mom used to make when I was younger. A simple mixture of taco sauce and light mayo makes a standard turkey sandwich, not so standard. I love that the sauce is slightly spicy, creating the perfect departure from the usual mustard.
Spread mayo/taco sauce mixture on whole wheat tortilla.

Top sauce with turkey and shredded cheese.

Next, sprinkle shredded lettuce and diced tomatoes on top of the cheese.

Roll tortilla into a tight wrap.

Lunch is served!

What You Need
- 1 8-inch whole wheat tortilla
- 1 tablespoon light mayonnaise
- 1 tablespoon taco sauce
- 3 thin slices of reduced sodium deli turkey
- 1/8 cup shredded cheddar blend cheese (can use reduced fat cheese)
- 1/3 cup shredded romaine lettuce
- 1/2 Roma tomato, finely diced
What To Do
- Combine mayo and taco sauce in a small bowl. Mix until there are no lumps and the ingredients have become uniform.
- Spread sauce over whole wheat tortilla.
- Layer turkey and cheese on top of sauce.
- Sprinkle shredded lettuce and diced tomatoes on top of the cheese.
- Roll tortilla into a tight wrap, cut in half and enjoy.
