Time Flies When…

This had to have been one of the quickest weeks of my life.

My mom came to Chicago on Monday and we spent the week packing boxes in my apartment, running errands, and taking walks. Each morning that she was here, we started our day with a fresh fruit smoothie. Our breakfast drink consisted of a combination of banana, strawberries, mango, and kale. On Wednesday morning we walked to Green City Market, and got peaches that were sweet as sugar. For the last morning she was in town, we swapped out the mango for a peach. This was the first time I’d made smoothies with kale; not only did it feel more substantial, I loved knowing I was getting an extra serving of vegetables first thing in the morning.

Although the week flew by, it was incredibly productive, and I was so grateful for all my mom’s help.

Fruit & Kale Smoothie

Yield: 1 large glass or 2 small glasses

What You Need

  • 1/2 cup non fat Greek yogurt
  • 1/3 cup kale, washed and hard stems removed
  • 1 banana
  • 1 small peach or 1/2 cup of mango
  • 1/2 cup strawberries
  • 6 large ice cubes

What To Do

  1. Add all ingredients in a blender.
  2. Blend until all the fruit, kale, and ice cubes are pureed.
  3. Pour into glasses and enjoy!
