It’s Detox Monday…but this week its arriving on Tuesday!

With the holiday yesterday, my schedule didn’t allow for getting back on track until today. Besides, it’s tough to think about detoxing when Memorial Day is the unofficial start to barbequing season.

My weekend wrapped up what felt like a month of birthday celebrations! My parents hosted a big family dinner on my behalf at Hugo’s Frog Bar Saturday night; in addition, I spent time with my adorable nephew, enjoyed a short boat ride on the Chicago River, took a long walk along the lake with my mom, and unexpectedly caught up with a friend who was in town.

Now, with no long weekends in sight, its back to the grind.

I’m kicking off the work week with a healthy Creamy Cesar Salad Dressing recipe adapted from my new Big Book of Salads cookbook c/o Cooking Light. This recipe has all the amazing flavors without the guilt of a full fat Cesar. With fat-free plain yogurt as the base, you can indulge with only 26 calories per serving. I drizzled the zesty dressing on romaine hearts, making the perfect side salad.




Creamy Caesar Dressing

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 1/2 cup

Serving Size: 1 tablespoon

Calories per serving: 26

What You Need

  • 1/3 cup plain fat-free yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon freshly ground

What To Do

  1. Combine all ingredients in a bowl; stir well with a whisk.
  2. Store in an airtight container in refrigerator up to 2 days.
