Creamy Garlic Pasta

It’s been one of those weeks.

I’ve been feeling blah, tired and unmotivated. Wednesday feels like Thursday, and the gym’s gotten the cold shoulder the last few days.

Naturally, this lethargic feeling has made me crave something totally sinful.

I’ve long been making eyes at this Creamy Garlic Pasta that continues to appear on my Pinterest feed. This was the perfect week to give in to my temptation.

I reduced the cream from the original recipe, but this dish was anything but light. Just like the name suggests, the pasta was garlicy and cheesy, with a wonderful simplicity.

Creamy Garlic Pasta

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

What You Need

  • 2 teaspoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 3 cups chicken stock
  • ½ lb spaghetti or angel hair pasta
  • 1 cup grated parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons chopped fresh parsley

What To Do

  1. In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil.
  2. Once it is at a rolling boil, add the pasta and cook for as long as the box’s directions indicate.
  3. Reduce the stove to medium heat and mix in the parmesan until completely melted.
  4. Turn off the heat and stir in the cream and parsley. Serve immediately.
