Wine Club

It’s that time of the month again, when us girls gather for an evening of chatting, eating and wine drinking!

This month we sipped on Pino Gris while we devoured a spread of foods, all falling into my friend’s theme of Munchie Foods.

We snacked on a seasoned gold fish and pretzel mix, followed by a taco dip that did not stand a chance!


For the main course, my friend made Jalapeno Popper Grilled Cheese Sandwiches with Parmesan Truffle Tater Tots. Yeah, I said it! ┬áIt was pretty much insanity on a plate. A classic grilled cheese was dressed up with spicy jalapeno peppers and crunchy potato chips IN the sandwich. This was munchie food at it’s finest. And the Parmesan Truffle Tater Tots speak for themselves! I will definitely be recreating this meal at home.



For dessert, we dipped our hearts out with Chocolate Chip Toffee Cookie Dough Dip! My friend served the unique treat with mini Nilla wafers and graham crackers. Deelish!

Jalapeno Popper Grilled Cheese Sandwich

Prep Time: 34 minutes

Cook Time: 6 minutes

Total Time: 40 minutes

Yield: 1 sandwich

What You Need

  • 2 jalapeno peppers, cut in half lengthwise and seeded
  • 2 slices sour dough bread
  • 1 tablespoon butter, room temperature
  • 2 tablespoons cream cheese, room temperature
  • 1/2 cup jack and cheddar cheese, shredded
  • 1 tablespoon tortilla chips, crumbled

What To Do

  1. Place the peppers on a baking sheet with the cut side facing down.
  2. Place the baking sheet on the top shelf in the oven and broil until the outer layer of the skin has blackened, about 8-14 minutes.
  3. Place the peppers in a zip-lock bag or other sealable container, seal and let them cool until you can handle them, about 20 minutes.
  4. Remove the skins from the peppers. The skins should easily "pinch" off.
  5. Butter the outside of each slice of bread and spread the cream cheese on the inside. Sprinkle half of the cheese on the cream cheese of one slice of bread, top with the jalapenos, crumbled tortilla chips, the remaining cheese, and finally the other slice of bread.
  6. Heat a non-stick pan over medium heat.
  7. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.

Parmesan Truffle Tater Tots

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 2 servings

What You Need

  • 2 cups frozen tater tots
  • 2-3 teaspoons truffle oil (or more to taste)
  • 1/4 cup freshly shredded parmesan cheese
  • 2 teaspoons dried parsley
  • Pinch of salt

What To Do

  1. Bake tater tots according to package instructions (NOTE: I typically cook mine longer than the bag says as I like a good crispy tater tot!).
  2. Remove from oven and toss with truffle oil, parmesan, parsley, and salt while still hot.
  3. Serve immediately.

Chocolate Chip Toffee Cookie Dough Dip

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 12 servings

What You Need

  • 1 8-ounce package cream cheese
  • 1/2 cup butter
  • 1 cup powdered sugar
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 cup chocolate chips
  • 1 cup toffee bits

What To Do

  1. Cream together the cream cheese and butter.
  2. Add all remaining ingredients and mix until well-combined.
  3. Serve with graham crackers and mini Nilla wafers.

Notes

Do NOT use reduced fat cream cheese, as it may cause your dip to have the wrong consistency.
