This weather is UNREAL! It’s almost eerie how mild the winter has been and how warm it is in only mid March. Now I’ve lived in the Midwest long enough – i.e. my entire life – to know that one day might be gorgeous and the very next you could be knee deep in snow scraping sheets of ice off the windshield of your car. BUT with a ten day forecast looking more like May than March, I am going to try to embrace it rather than wonder if all this sunshine is the result of global warming.

Before you pack up your winter clothes and put away the crock pot, I highly recommend you try this BBQ Pulled Chicken recipe that I made on Sunday. The chicken slow cooks in the oven and the crock pot for quite some time, but the effort is minimal and the reward is huge. With a mix of smoky and spicy flavors, the shredded meat was so good, it almost didn’t need the barbeque sauce. But it does, because it makes the sandwiches that much more tasty. Next time I have a bunch of friends over, I’m making this chicken.

BBQ Pulled Chicken

Prep Time: 30 minutes

Cook Time: 6 hours

Total Time: 6 hours

Yield: 8 - 10 sandwiches

What You Need

  • 3-4 pounds of bone-in, skin on chicken breasts
  • Dry BBQ rubs, any flavor - I used a mix of Chipotle, Hickory and Mesquite
  • 1 bottle of your favorite BBQ sauce

What To Do

  1. Preheat oven to 250 degrees.
  2. Liberally coat the chicken with dry rub and then place in a single layer in a shallow baking dish(es).
  3. Slow cook chicken for 3 hours or until it easily shreds when tested with a fork.
  4. Allow chicken to completely cool, then separate chicken from skin and large bones. Shred chicken into small pieces using two forks or hands. Carefully remove and discard any remaining small bones or fat.
  5. Place shredded chicken in crock pot, and mix with 1/2 bottle BBQ sauce. Refrigerate overnight if not serving until the next day.
  6. Cook on high for 3 hours, stirring occasionally. Gradually add the rest of the bottle of BBQ sauce as needed. If chicken is sticking to crock pot at all, turn back to low.
  7. After 3 hours, turn crock pot to warm and serve with sandwich buns.
