In keeping with the theme of my previous post, I refer to  #9 on My Top Ten Comfort Foods List: Chicken Parmesan.

There’s just something about the thin tender chicken coated in crispy breadcrumbs, topped with fresh tomato sauce and melty mozzarella cheese that makes me swoon. I love making Chicken Parmesan because its one of those dishes that tastes just as good, if not better, homemade versus in a restaurant.

I grew up eating this particular Chicken Parmesan recipe. It was my mom’s go to dinner selection when she wanted something good and easy to make for us. Sometimes it was topped with the sauce and cheese, but mostly she made it without as breaded chicken. I prefer it with the whole nine yards, and served alongside pasta.  The best part about this recipe is that the chicken is baked, not fried. It’s incredibly crispy and flavorful, without all the extra oil. In my opinion, it’s the perfect meal!

Baked Chicken Parmesan

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 2 chicken breasts

What You Need

  • 2 boneless skinless chicken breasts
  • 1 egg, beaten
  • 1 tablespoon melted butter
  • A dash of Lawry's salt
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 1/4 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon parsley flakes or fresh, finely snipped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • A shake of dried basil
  • 3/4 cup tomato sauce
  • 2 slices of mozzarella cheese or shredded mozzarella

What To Do

  1. Preheat oven to 400 degrees.
  2. Mist or spray a roasting pan with oil.
  3. Using a meat hammer, pound chicken until it is approximately 1/4-inch thick.
  4. In a shallow dish, combine egg, melted butter, and Lawry's salt.
  5. In a second shallow dish, combine all ingredients beginning with Parmesan cheese through dried basil.
  6. Dip chicken breasts in egg mixture and then in bread crumb mixture.
  7. Place coated chicken breasts on roasting pan and bake at 400 degrees for 20-25 minutes.
  8. While chicken is baking, heat tomato sauce.
  9. 5 minutes before the end of cooking, evenly distribute tomato sauce and mozzarella cheese over chicken breasts. Finish baking and make sure cheese if fully melted.

Notes

I like to serve the chicken over whole wheat pasta and spinach. You can use additional tomato sauce or toss the noodles in olive oil.
