Salad For Dessert

For me, the best part of college, other than cheap drinks and 24/7 pizza delivery, was living mere feet or floors away from my nearest and dearest. It was basically a party all the time because there was always someone to hang out with.

Fortunately the party didn’t end when college did. Since I moved to Chicago, I’ve lived in two condo buildings, both of which friends of mine also lived in. Over the past two years its been a Sunday night tradition to have dinner with our friends in the building. Not only is this time reminiscent of college days, but it’s also a great cap to the weekend.

This past Sunday our friends made us Asian Grilled Beef Salad. Mixed greens are lightly tossed with lime juice, soy, and sesame oil, mixed with fresh mint and cilantro, and finally topped with tender beef. The salad was insanely refreshing, fragrant and tangy – we couldn’t get enough of it. In fact, my husband liked the salad so much, he said he could eat it for dessert!


Asian Grilled Beef Salad

What You Need

  • 1 lb skirt or flank steak
  • 6 cups torn salad greens or mixed greens
  • 1 cup torn fresh herb leaves (mint, cilantro, Thai basil, or a combination)
  • ¼ cup minced red onion
  • 1 medium cucumber, peeled, cut in half lengthwise, seeded, and diced
  • 1 small fresh hot red chili pepper, minced
  • Juice of two limes
  • 1 tablespoon sesame oil
  • 1 tablespoon fish sauce or soy sauce
  • ½ teaspoon sugar

What To Do

  1. Light a gas or charcoal grill, or heat a broiler; the rack should be about 4 inches from the heat source. Grill or broil the beef until medium rare, 5 to 10 minutes total, turning once or twice, depending on the thickness.
  2. Toss the lettuce with the herbs, onion, and cucumber.
  3. Combine the remaining ingredients with 1 tablespoon of water (the dressing will be thin) and use half of this mixture to toss the greens. Remove the greens to a platter, reserving the remaining dressing.
  4. Slice the beef thinly, reserving its juice; combine the juice with the remaining dressing. - Lay the slices of beef over the salad, drizzle the dressing over all, and serve.
