Whoever said “there’s no such thing as a free lunch” wasn’t following The Southern Mac on Twitter.
The food truck, turned storefront, tweeted to their 9,500 followers to email them if you wanted a free lunch.
Never one to turn down macaroni & cheese or a free lunch, I promptly sent an email.
Next thing I knew, a very friendly delivery man was at my office with two piping hot containers of cheesy, creamy goodness.
The first mac I tasted was the BBQ Beef Brisket, Cheddar and Sweet Baby Ray’s BBQ Sauce. Any skepticism I had about the noodle and BBQ sauce combo was dispelled with my first bite. Wow! The flavors played together quite nicely, and it helped that there was just the right amount of sauce. Not to mention, the chunks of brisket were surprisingly tender and amazing. So what, they can braise brisket AND make a mean macaroni and cheese?!
The second variety was the New Mexican Green Chile with pepper jack and cojita cheese. The kick derived from the green chiles and pepper jack cheese added a whole new dimension to the usually mild dish. I never would have thought to make macaroni and cheese with pepper jack, but it’s a novel idea that I fully support.
Needless to say, today’s lunch was heavenly – thanks Southern Mac!
