Football Sunday

A few years ago I attended a cooking party led by Chef Kasey Passen of Culinary Gatherings. The evening began with a wine tasting, followed by preparing and cooking several new dishes. My girlfriends and I were left with useful tips, as well as a wonderful cookbook of the night’s recipes. That night I was introduced to truffle popcorn. This highly addictive bowl-of-goodness has become one of my favorite go-to snacks. It’s a crowd pleaser, and perfect for Football Sunday, as I found out today. Put out a bowl of this truffle popcorn at a party or during movie night and I promise it will be gone in no-time. The rich, truffle taste contrasts with the refreshing lemon zest making this the perfect marriage of delightful flavors.

Truffle Popcorn

What You Need

  • 3/4 cup vegetable oil
  • 2 cups popcorn kernels
  • 2 tablespoon Kosher salt
  • 2 tablespoon butter
  • 1/3 cup truffle oil
  • 1 to 2 pinches of truffle salt
  • Zest of one lemon
  • Shaved parmesan cheese

What To Do

  1. Heat a large pot on the stove. Add the vegetable oil and heat for one minutes. Do not let it smoke.
  2. Add the popcorn kernels and 1 tablespoon of Kosher salt.
  3. Agitate the pot and toast the kernels for one minute. Cover the pot and turn burner to high heat.
  4. In the meantime, melt the butter with the truffle oil in a saucepan.
  5. Let the popcorn pop until you start to hear the kernels slowly stop popping.
  6. Turn off heat and pour the popcorn in a large bowl.
  7. Pour the butter-truffle oil mixture over the popcorn, mix it up, and season with the remaining salt to taste. Add extra salt as needed.
  8. Add 1 to 2 pinches of truffle salt.
  9. Using a microplane, grate lemon zest over popcorn.
  10. Sprinkle desired amount of parmesan cheese over popcorn.

Notes

I use an air popper instead of making the popcorn on the stove when I am crunched for time.
