That’s Amore

Last night was a great change of pace; instead of going out for dinner, we stayed in and cooked with two other couples.  We baked homemade pizzas on the grill using a pizza stone. Not only were our pies delicious, but the preparations were also a fun activity for everyone to get involved.

Using premade whole-wheat dough from Whole Foods, we constructed five (yes, five!) different types of pizzas.

First we prepared the toppings; then we rolled the dough until it was flat and thin, and finally we assembled the pizzas.

The baking times varied slightly depending on crust thickness and desired crispiness. Each pizza baked for roughly 10-15 minutes. If you do not have a pizza stone/grill, you can bake the pizzas in the oven at 450° on a pan.

Once the dough is rolled and formed, but before the toppings are added, don’t forget to brush the dough with olive oil to prevent it from getting soggy. Also, sprinkle corn meal on the pizza stone or pan before you place your dough on it to avoid sticking.

The pizza varieties included:

4-Cheese: Fontina, mozzarella, taleggio and parmigianino.

Barbeque chicken: Bake one chicken breast in the oven for 25 minutes. Once the chicken has cooled, slice the chicken into thin pieces. Spread barbeque sauce on the flattened pizza dough. Top with mozzarella cheese, sliced chicken and onions.

Veggie: Garlic sautéed spinach and mushrooms with mozzarella and tomato sauce.

Meat Lovers: Italian turkey sausage, pepperoni, mozzarella cheese and tomato sauce.

Margherita: Fresh mozzarella sliced, roasted garlic, basil and tomato sauce.

There was definitely something for everyone and each of us had a different favorite!
